Best boutique option in Uptown — good bar program, walk to the Mint Museum and Blumenthal. Rates $180–300/night. The rooftop view of the Uptown skyline is excellent.
Full day on the water course and trails. The mountain biking trails are 10+ miles of single-track that rival proper trail systems.

90 minutes northwest — Old Salem is a preserved 18th-century Moravian community (authentic and largely unknown outside NC), and Lexington Barbecue is the anchor of the Eastern NC BBQ tradition. Drive up, do both, come back.
Full day — drive the Blue Ridge Parkway south from Mount Mitchell, stop at several overlooks, and walk the summit trail. Fall foliage (October) makes this route extraordinary.
Drive to Davidson and book Kindred for the farewell dinner — it's worth building the schedule around. The milk bread arrives warm and everything after it lives up to the reputation.
If you're coming during the NFL or NBA season, a Panthers game at Bank of America Stadium or Hornets game at Spectrum Center is worth adding. Charlotte fans are enthusiastic and the venues are well-run. Tailgate culture at Bank of America is serious.
