Stingray City, coral gardens snorkeling, lunch on the boat, sunset sail back. Book a private catamaran; don't share with a group on a luxury trip. Run by Cayman Catamaran Charters, Captain Bryan, or similar.
Full day at the spa — the AWAY Spa at the Ritz does an excellent couples treatment package. The thermal pool and relaxation lounge alone are worth a half-day. Budget $300–500 for a couples package.
Reserve Luca for the penultimate night — the table on the deck over the water, with the full seven-course tasting menu and the wine pairing. This is the meal of the trip.
Last morning: drive the east end of the island — blowholes on the iron shore, Colliers Beach (the locals' beach), and the coral reef at East End visible from the shore. A different island from Seven Mile. Return for a noon checkout.
The departure terminal has a good duty-free selection — Cayman Spirits makes Seven Fathoms rum aged underwater in oak barrels in the North Sound. It's genuinely good and uniquely Caymanian. Grab a bottle before you leave.
